Chirnside Park, Yarra Valley
Varietals: Cabernet Sauvignon 75%, Cabernet Franc 15%, Merlot 10%
Tasting Notes: Mulberries, blueberries and blackcurrants dominate the nose, but underlying are some brambly and mineral tones along with some highly scented new oak flavors. The oak is a mixture of vanilla and cedar characters, which superbly support the fruit. On the palate the texture is thick and viscous, almost liqueur like. The finish sees ample acid and drying fine tannin. The wine will continue to develop and soften for at least another 4-6 years.
Winemaker’s Notes: The fruit is from low yielding (1.0 tonne/acre), dry grown old vines from Yarra Valley. The grape must was fermented on its skins with introduced yeast for a period of 14 days, basket pressed and racked to 50% new and 50% used French oak for a period of 24 months. The wine was bottled without filtration.
